While the deer have pretty much annihilated the tomato and pepper plants...they are not as fond of the zucchini (at least not yet) and we have had a ton of the little and not so little fellas. Who knew that they can get as big as a baseball bat in a matter of a day!
I have been searching all over for recipes to use up the bounty, and found this winner of a recipe.
We had it last night and loved it! (well, the boys wouldnt eat it, but that just meant more for me, Loren and grandpa Dick)
I used panko instead of the bread crumbs and it was great. Next time I might add some chyenne for a little kick.
Anyway, this is the worst picture but here it is - I forgot to take a pix till they were almost gone!
